It was wellness week recently and in a moment of motivated impulsiveness I bought several bunches of bananas, because I love bananas. Yeah! Great idea! The road to hell is paved with good intentions. I really only like bananas when their green or when they’re cooked. And so the bananas turned yellow, then spotty, then brown, and by the time I remembered them they were black. All is not lost dear readers, here are a few ideas you can do with overripe bananas.
Banana Bread/Muffins: I kind of follow the first recipe I can find, but I like my muffins to be cake like and moist. So the more bananas and butter the better. I also like lots of things in my breads, i.e. nuts, chocolate chips, spices, coconut, even zucchini. Feel free to clean out some of those extra ingredients you don’t know what to do with. I also really want to try this soon.
Banana oatmeal chocolate chip cookies: These were amazing. We ate them all before we could take a picture. The banana flavor isn’t overwhelming and helps the cookie stay chewy without some of the extra calories. Because they’re totally “healthy” you can eat twice as many as you normally would. Bonus: add walnuts a la monster cookies.
Banana Bread Waffles. Don’t let the long list of ingredients overwhelm you here. I’ve also found methods that just jack up your standard pancake mix too. This is great for brunches where you want to impress people!
And never, ever, forget the frozen banana daiquiri. Bananas for the win.
